One-Pan Broiled Greek Branzino

 2 whole branzino (about 1½ pounds each), gutted, fins removed and scaled
 5 sprigs fresh oregano
 3 garlic cloves, smashed
 1 lemon, sliced
 1 medium shallot, sliced
 1 pt cherry tomatoes
 2 tbsp olive oil
 ½ cup crumbled feta cheese

Preheat oven to 400°. Spray rimmed baking pan with cooking spray. Place branzino on baking pan; stuff each cavity with 1 oregano sprig, and half the garlic and lemon slices. Sprinkle shallot and tomatoes around branzino; drizzle with oil, sprinkle with remaining 3 oregano sprigs and salt and pepper to taste. Roast 20 minutes.

Preheat broiler to high; sprinkle tomatoes and shallots with cheese. Broil 2 minutes or until cheese is lightly browned.

Make it a Meal: Serve over whole wheat orzo mixed with scallions, fresh parsley and fresh dill.
