1package (7.9 ounces) halloumi cheese, cut into 1-inch cubes ( can substitute with feta )
3cupscubed fresh watermelon
1cupfresh mint leaves
1cuphalved green grapes
¼cupchopped unsalted pistachios
2tbsplemon juice
1tsplemon zest
2tbspolive oil
4(10-inch) wooden skewers

Prepare outdoor grill for direct grilling over medium-high heat; soak skewers in water 20 minutes. Thread cheese onto skewers; spray with olive oil cooking spray. Place skewers on hot grill rack; cover and cook 5 minutes or until grill marks appear, turning once. Transfer skewers to cutting board; cool slightly. Remove cheese from skewers

In large bowl, toss watermelon, mint, grapes, pistachios, lemon juice, oil, lemon zest and cheese; sprinkle with 1/2 teaspoon each salt and fresh ground black pepper. Makes about 5 cups.
