Vietnamese Grilled Pork

 2 lbs pork loin, cut into ¼ inch slices or small cubes
 3 tbsp lemongrass stir-in paste
 1 shallot, peeled and minced
 1 tbsp minced garlic
 1 tsp cane sugar
 1 tbsp honey
 1 tbsp fish sauce
 3 tbsp soy sauce
 2 tbsp oyster sauce
 1 ½ tbsp vegetable oil
 1 tsp salt
 ½ tsp black pepper

Combine pork loin with the rest of the ingredients in a large airtight container or zip lock bag and marinate for at least 4 hours, preferably overnight.

When ready to cook, preheat grill to 375 degrees and be sure to oil the grill grates well.

Skewer the marinated meat onto metal skewers or bamboo skewers that have been soaked for at least 30 minutes in water.

Grill skewers for 4 minutes per side, or until caramelized and pork has reached an internal temperature of 145 degrees.

Serve with any desired accompaniments, such as freshly steamed white rice and stir-fried vegetables.
