Preheat oven to 425 F. Season pork with salt and pepper to taste; drizzle with liquid smoke. In a large ovenproof skillet heat oil over medium-high heat. Add pork; cook 3 minutes, turning brown evenly on all sides.
Transfer skillet from oven. Let pork stand 10 minutes before cutting into thin slices.
For the slaw, in a small bowl whisk together lime juice, olive oil and sugar. In a medium bowl combine coleslaw mic, pineapple, cilantro and (if desired) jalapeño. Add lime mixture, and season with salt and pepper to taste; toss to coat. Serve with sliced pork.
Make it a meal: Serve with black beans and steamed brown rice.
