Cold Sesame Noodle Salad

 8 oz Soba noodles (1/2 package)
 2 tbsp Powdered peanut butter
 1 Garlic clove, minced
 2 tbsp Rice wine vinegar
 1 tbsp Sesame oil
 2 ½ tbsp Lime ponzu sauce
 ½ tsp Red pepper flakes
 ½ Medium red bell pepper, sliced thin
 ¼ cup Frozen shelled edamame, thawed
 2 tsp Toasted sesame seeds

Prepare noodles as label directs; drain and rinse under cold water.

In large bowl, whisk powdered peanut butter with 1 tablespoon water until smooth; whisk in garlic, vinegar, oil, ponzu sauce and red pepper flakes. Add bell pepper, edamame and noodles; toss to combine and sprinkle with sesame seeds. Makes about 3½ cups.
