Broiled Citrus Spiced Steak Kabob Salad

 ½ cup fresh orange juice
 ¼ cup extra virgin olive oil
 3 tbsp sweet onion & herb seasoning
 1 lb sirloin steaks, cut into 1 ½-inch pieces
 8 (9.75-inch) wooden skewers
 2 small portobello mushrooms, each cut into 8 wedges
 1 medium red bell pepper, cut into 1 ½-inch pieces
 1 medium zucchini, cut crosswise into ¾-inch slices
 9 oz chopped hearts of romaine lettuce
 1 cup halved red grape tomatoes

In small bowl, whisk orange juice, oil and seasoning.

Place beef in large zip-top plastic bag; pour ½ cup marinade over beef. Seal bag, pressing out excess air; refrigerate at least 30 minutes or up to 4 hours.

Preheat broiler to high. Soak skewers in water 10 minutes. In large bowl, toss mushrooms, bell pepper, zucchini and ¼ cup remaining marinade. Remove beef from marinade; discard marinade. Alternatively thread beef and vegetables onto skewer.

Broil Kabobs 12 minutes or until internal temperature of beef reaches 145° for medium-rare, turning kabobs a quarter turn every 3 minutes. Serve kabobs over lettuce and tomatoes.

Make it a Meal: Serve with garlic & herb whole grain bread.

Make it Gluten Free: Dependent on sweet onion and herb seasoning being used.
