Sheet Pan Falafel Burgers

 31 oz Wholesome Pantry™ Organic garbanzo beans, drained and rinsed, divided (2 cans)
 1 cup coarsely chopped red onion
 ½ cup fresh parsley leaves
 ¼ cup chickpea flour
 3 tbsp fresh lemon juice
 2 tbsp falafel mixed spices
 4 100% whole wheat hamburger buns
 2 roma tomatoes, sliced
 ¼ cup yogurt-based cucumber ranch dressing
 1 ½ cups baby arugula
 Crumbled feta cheese for garnish (optional)

In food processor, pulse 1 can garbanzo beans, onion, parsley, flour, lemon juice, mixed spices, and ¼ teaspoon pepper until slightly chunky, scraping bowl occasionally; transfer to large bowl and fold.

Preheat oven to 450°. Line rimmed baking pan with foil; spray with cooking spray. Place patties on prepared pan and spray with cooking spray; bake 20 minutes or until bottoms are browned.

Serve burgers in buns topped with tomatoes, arugula, dressing and cheese, if desired.

Chef Tip: For a freezer-friendly dish, prepare recipe through step 1. Wrap each patty tightly with plastic wrap and freeze for up to 3 months. To bake patties, preheat oven to 450°. Line rimmed baking pan with foil; spray with cooking spray. Remove plastic wrap from desired amount of patties and place on prepared pan; bake from frozen 30 minutes or until heated through and bottoms are browned.
