2pie crusts
1cuppumpkin puree
¼cupbrown sugar
¼cupcream cheese, softened
2tsppumpkin spice
1egg, slightly beaten
few tbsp water

Preheat the oven to 425 degrees and line a cookie sheet with parchment paper.

Whisk together pumpkin puree, brown sugar, cream cheese and pumpkin spice until smooth.

Set aside.

Use a round cookie cutter to cut out circles from the pie crust.

Use one circle as the bottom of the pastry tart.

On the other pie circle, use a knife to carefully cut out a Jack O Lantern face.

Place plain pie circles on the cookie sheet, spread a tbsp or 2 of pumpkin mixture in the center of the pie circles, then top with the jack-o-lantern pie circles.

Use a fork to crimp the edges to finish your pastry tarts.

Whisk together the egg and a few tbsp of water to make an egg wash.

Brush over your pastries before putting in the oven and baking for 10-15 minutes or until golden brown.
