Instant Pot® Herb-Poached Salmon

 4 skinless salmon fillets (about 5 ounces each), divided
 1 tbsp chopped dill, divided
  cup white cooking wine, divided
 1 bag (12 ounces) steam-in-bag broccoli florets
 1 tbsp fresh lemon juice
 1 package (16 ounces) herb creamer potatoes

In bottom of 5-quart Instant Pot, place steam rack; sprinkle salmon with dill, and ½ teaspoon each salt and pepper. Place 2 salmon fillets on steam rack; add ⅓ cup each wine and water. Place lid on Instant Pot and close pressure valve to seal; pressure cook on high 3 minutes. Quick release pressure and remove lid; carefully remove rack with salmon, transfer salmon to plate and tent loosely with foil. Replace steam rack; repeat with remaining 2 fillets and wine, and ⅓ cup water.

Steam broccoli as label directs; transfer to large bowl. Add lemon juice, and ¼ teaspoon each salt and pepper; toss. Makes about 5 cups.

Prepare potatoes as label directs. Makes about 4 cups.

Serve salmon with potatoes and broccoli.

Chef Tips:
Customize this recipe by swapping the dill with a poultry herb blend of sage, thyme and rosemary and/or the potatoes with baby purple potatoes.

If your Instant Pot did not come with a steam rack, fish can be placed on the bottom of the Instant Pot.
