Protein Waffles with Green Tomatoes, Avocado and Herbed Yogurt

Yields 1 Serving Servings Quarter (0.25 Servings) Half (0.5 Servings) Default (1 Serving) Double (2 Servings) Triple (3 Servings)
1 cup Kodiak cake mix
1 cup water
9 oz baby spinach
2 scallions (sliced)
2 medium green tomatoes (sliced)
1 avocado (sliced)
1 ½ tbsp olive oil
1 tbsp fresh lemon juice
½ cup plain fat free greek yogurt
1 tbsp chopped mint
1 tbsp chopped dill
1 tbsp chopped parsley
1 In medium bowl, whisk yogurt, lemon juice, mint, parsley, dill, 1/8 teaspoon each salt and pepper. Chill until ready to serve.
2 To blender add: water, spinach and oil. Blend until smooth. To large bowl add waffle mix. Stir in spinach mixture. Combine. Do not over mix.
3 Ladle batter into heated and greased waffle maker and bake according to your waffle maker instructions.
4 Top waffles with, tomato and avocado slices. Garnish with scallions and dollop of herbed yogurt.
