Preheat oven to 400°. Spread ½ cup marinara sauce in 9-inch square
baking dish; arrange chicken slices standing upright over sauce.
Alternating every few slices, add cheese slices between chicken
slices; top with remaining ¼ cup marinara sauce and roast 8 minutes
or until cheese is slightly melted and chicken is heated through.
Makes about 4 cups.
Serve caprese chicken sprinkled with tomato and drizzled with
balsamic glaze; garnish with arugula, if desired.
