In medium bowl, whisk yogurt, lemon juice, mint, parsley, dill, 1/8 teaspoon each salt and pepper. Chill until ready to serve.
To blender add: water, spinach and oil. Blend until smooth. To large bowl add waffle mix. Stir in spinach mixture. Combine. Do not over mix.
Ladle batter into heated and greased waffle maker and bake according to your waffle maker instructions.
Top waffles with, tomato and avocado slices. Garnish with scallions and dollop of herbed yogurt.
